🔪 Instructions

  1. Beat the eggs hard with a big pinch of salt until frothy. Set aside.
  2. Heat the oil in a 10-inch nonstick or carbon steel skillet over medium-high until shimmering. Add the potatoes and onions; they should bubble gently, not hard. Keep it at a gentle bubble and cook, stirring now and then, until meltingly tender, about 25 minutes. Drain through a strainer set over a heatproof bowl and save the oil.
  3. Salt the potatoes and onions generously. Re-froth the eggs, stir the potatoes and onions in, and let it sit 5 minutes.
  4. Wipe out the skillet, add 3 tbsp of the saved oil, and heat over medium-high until shimmering. Pour in the egg mixture and cook, swirling and shaking the pan, until the bottom and sides start to set, about 3 minutes. Press the edges in with a spatula to shape a puck, and cook about 3 minutes more, lowering the heat if the bottom is browning too fast.
  5. Over the sink, cover the skillet with a large flat plate and flip the tortilla onto it in one quick motion. Add 1 more tbsp oil to the pan, slide the tortilla back in, and cook until the second side starts to firm, about 2 minutes. Press the edges in again and cook until lightly browned but still tender in the center, about 2 more minutes. Flipping 2-3 more times here helps it cook evenly.
  6. Slide onto a clean plate and rest at least 5 minutes. Serve with allioli, in wedges for a meal or cubes as a snack.
